What does ‘Nordskov’ mean?
It’s Danish for ‘Northwoods’. We have a special connection with the Northwoods - both of us grew up going ‘up north’. We also have a deep appreciation for hygge (Scandinavian term for cozy living and seeking simple joy) and see many parallels with time spent up north. So we put the two together and came up with Nordskov.
Where is your shop located?
We do not have a physical store. You can find us every Saturday morning at the Janesville Farmers Market from May through October. We also accept orders through our online shop, then prepare orders and offer either a pick up or local delivery option. At check out, you’ll see dates and options for pick up/delivery (we offer delivery only in the Whitewater, WI area). See pickup/delivery instructions within your order confirmation email for additional details.

Do any coffee shops brew your coffee?
Yes! Just one, The Langholf in Fort Atkinson, WI. Their owners & baristas are top notch - stop in and taste what we’ve been working on together.
Do you ship?
In 2025, we’ve decided to ship once per quarter (March, June, Sept, Dec). Everything on the website is available except for cold brew. Shipping only within the USA and all beans will ship as whole bean to keep them fresher longer. Keep an eye out for reminders in social media when shipping windows open.
What is Nordic style coffee?
The raw coffee beans we select naturally have beautiful flavors in them. We roast gently and tailor profiles for each coffee so you to taste the bean, not the roast. This is the Nordic style.
It is a demanding approach that produces nuanced and flavorful coffees. You will love the clean flavor and nuanced notes (fruity, nutty, spicy, sweet, herbal and/or floral) you discover in your cup.
How does the order process work?
When you check out, you will see available pickup / delivery dates listed. We deliver locally one day a week (Fridays) and offer pick up one day a week in Whitewater, Madison and Janesville. Additional details are sent via email once an order is confirmed. Orders need to be in by Tuesday night for that week’s production.
During the summer, we deliver via canoe on Whitewater Lake (weather pending). Please make sure your address is clearly marked on the dock!
Can I find you at any local farmer’s markets?
We’ll be back at the Janesville Farmers Market in May 2025. In the meantime, check our Events Page to find out where to find us!
How fresh is your coffee?
We roast coffee at least twice a month and put the roast day on each bag of coffee so you’ll know exactly when your coffee was roasted. Our coffee is so fresh that we recommend letting it rest at least 3 days from the roast date before you use it for filter coffee and a week or two for espresso.
Do you sell ground coffee or only beans?
We sell whole beans but if you would like us to grind it for you before pick up/local delivery, just note that during the ordering process. We have a high quality Mahlkonig EK43 grinder that we’ll use to grind your coffee to suit your brew method. If you’re not sure what the right option is, just drop us a line and we’ll work together to get you a coffee that will taste great on your home setup.
How should I store my coffee?
You’ll get the best results if you store your coffee in an airtight container (like the resealable bags it comes in) in a cool dark place. The more coffee is exposed to oxygen, the quicker it loses its vibrancy and flavor, especially if it is ground.
What coffee maker do you recommend?
We recommend the OXO 9 cup coffee maker. Water temperature is critical in the brewing process to ensure the proper extraction of the coffee and most coffee makers don’t brew hot enough. The OXO brews hot enough and regulates brew time so you get a great cup of coffee every time.
What coffee grinder do you recommend?
If you’re making smaller brews, we recommend the 1Zpresso hand grinders. For a countertop grinder, we recommend the Baratza Encore or the Fellow Opus. If you brew coffee at home, invest in a good burr grinder rather than a blade grinder. Burr grinders produce a more consistent grind size, which is key for an even extraction and better tasting coffee.
What ingredients are in your syrups? and do I have to use them in coffee?
All of our syrups are hand made with high quality whole ingredients (if you’re into extracts, flavorings and preservatives, you’ll have to look elsewhere). The syrups were designed to enhance the flavors of coffee so you can use them in your coffee or lattes, and they’re versatile. Use them on desserts, yogurt or even your favorite cocktail (recipes are on each syrup page).
Do I need to refrigerate the syrups?
We recommend that you refrigerate the bottle after you open it. It’s also helpful to give them a good shake before you use them.
